{recipe} Coconut Banana Bread


My mom always made really good banana bread; however the recipe she used wasn't the healthiest so I modified her recipe to create this coconut banana bread using more whole food ingredients. I usually make it in my Blendtec blender so it is super fast to throw together; but I've also made it in my mixer and mixed it by hand. I've made it using all different kinds of healthy sweeteners and they all turn out good. If you don’t have raw cane sugar, evaporated cane juice, organic Sucanat, or coconut palm sugar, you can always use plain old white sugar, we just prefer to use something a little healthier.


{Coconut Banana Bread}
2/3 cup Raw Cane Sugar, Organic Sucanat, or Coconut Palm Sugar (they all taste good)
1/3 cup Honey
1/3 cup Coconut Oil
3 Eggs
3 Ripe Bananas
3 Tbsp. Water
1/3 cup Unsweetened Shredded Coconut
3 Tbsp. Coconut Cream Concentrate (also known as Creamed Coconut) (optional)

Put all of the above ingredients in blender and blend till smooth. Then add the following:

2/3 cup All Purpose Flour
1 cup Whole Wheat Flour
1 tsp. Baking Soda
1/2 tsp. Salt
1/4 tsp. Baking Powder

Pulse blender until all ingredients are combined. Pour into a greased bread pan. Bake at 325 degrees Fahrenheit for about 1 hour or until toothpick comes out clean.

  1. I wonder if my husband would like this one, he is not a fan of banana bread but the coconut might make it different enough that he would eat it. I will have to give it a try.

  2. I am not a huge fan of coconut but I bet my son would love this anything with banana is a winner with him. Not mention it being healthy he will love it.

  3. Banana bread is one of my favorite things in the world for breakfast. I actually just started eating with Nutella on it....yum!

  4. This recipe is right up my alley. I don't do sugar nor yeast so this is perfect for me. I want to try this recipe as soon as we slow down a little and I can have time to make it.

  5. Not a coconut fan either, but my wife loves it. Her mom makes a chocolate zucchini bread with bits of coconut in it that is her favorite.

  6. This sounds yummmy!!! I dont like to eat too much coconut by itself, but mixed in foods, I love it! I think I'd enjoy this.

    1. I really like coconut in things, but not so much alone too. I think it is the texture that gets me. I do think I would love this bread though, I love coconut flavor.
