{recipe} Whole Wheat Blender Pancakes

My husband got me a new blender for my birthday and I’ve been trying out all sorts of new recipes. This is a combination of a recipe my grandma gave me that she used a lot when her kids were younger and a recipe out of the cookbook that came with the blender. It is healthy, cheap to make and they turn out perfect every time!







Whole Wheat Blender Pancakes
1 ½ cups milk (if I don’t have milk, I use water and it turns out fine)
1 cup whole wheat berries (we usually use hard white wheat)
2 Tbsp. Olive Oil
3 Eggs
2 Tbsp. honey, evaporated cane juice, or Sucanat (or sugar if you don’t have anything else)
1 ½ Tbsp. Baking Powder
¾ tsp. Salt

Add the milk and the wheat berries to the blender jar and run the blender until the berries are processed and batter is smooth. Add remaining ingredients to the blender jar and pulse to mix all ingredients. Pour batter into bowl and allow batter to rest for 5 minutes. Heat pan over medium heat. Pour about ¼ cup of the pancake batter into pan and allow to cook about one minute or until the underside of the pancake is golden and the bubbles on the top break. Flip and cook for another 30 seconds to 1 minute. Remove pancake from pan and repeat with remaining batter.

  1. Nice recipe.. We would need a blender to try it, but i guess we can whip it by hand..

    1. You can't whip the wheat berries. They have to be ground or blended.

    2. Yes, the wheat berries are just whole wheat, you have to put them in the blender to grind them up :) You could alternatively just use whole wheat flour to make these if you don't have a blender.

  7. I love using my blender to whip things up. I bet it makes them so much fluffier than if you would have use a mixer or just mixed it by hand. They look delish!

  8. This is great. I have a bag of wheat berries in the freezer that I don't use enough. I love that you can skip the step of grinding them first. I think that is why I don't use them a lot.

  12. Huh, I've never considered doing that before, nor have I ever seen a wheat berry. ^_^ Perhaps once I am done with my current diet plan I can try this.

  37. I am not a big pancake person but this really makes me want to give it a shot again. There is just something about a normal pancake that doesn't seem all that healthy. This definitely buts a healthier spin on the breakfast tradition.

  38. I have never heard of just blending the wheat berries in a blender!? We have a mill, but this seems really interesting. I bet it would offer a lot of texture to the pancakes as well. I will have to try it :)
