{recipe} Healthy Peanut Butter Balls


These peanut butter balls are a favorite in our house. Sometimes they are the only thing I can get my two year old to eat and since they are relatively healthy I don't mind if he eats them. Plus they are super easy to make.


Ingredients:

1 cup peanut butter (we buy fresh ground from our local grocer - its in the health food section)

1/2 cup raw honey

1 Tbsp. coconut oil, melted (choose unrefined coconut oil, you want the flavor!)

1/3 cup unsweetened shredded coconut

1 tsp. Chia seeds

1/3 cup plus 1 Tbsp. powdered milk

2/3 cup shredded coconut (Optional - To roll balls in)


In a medium mixing bowl, stir together peanut butter and honey. Add coconut oil, mix well. Add 1/3 cup shredded coconut and chia seeds, mix well. Add powdered milk and stir until fully incorporated. The balls should have a soft texture and should not stick to your hands when touched. Add more powdered milk if balls are too sticky.

Place 2/3 cup shredded coconut into food processor (or blender, magic bullet, etc) and process until fine texture.

Roll peanut butter mixture into 1-2 inch balls. Roll in shredded coconut. Serve.

Store in an airtight container.

  1. I've seen a similar recipe but it didn't call for Chia seeds. I think I like your version best! I have to try these!

  35. They do sound quite healthy. I love the idea of powdered milk, this is a great way to incorporate more milk into kids' diet, especially when they've become reluctant to it, as my daughter.

  46. You may try toasting the coconut and blending it for a few pulses. It makes it easier to coat the balls and adds a slightly nutty flavor to the coconut so those who do not like raw flaked coconut normally like it toasted.

  50. I love the fresh ground peanut butter. The taste is the best. I want to try these only using crushed peanuts. My kids think they are eating "Hair" when the eat coconut. But we all love the flavor of coconut.
