I recently found a super easy way to make yummy chicken... In the oven! I know this is something easy, but seriously it hasn't occurred to me to cook chicken breasts in the oven. I think it is healthy and quick; and you can do other things while it cooks! Here is what I have been doing:
Baked Chicken Breasts
Prepare a cookie sheet or jelly roll pan by lining it with aluminum foil and spraying or brushing with oil. Preheat oven to 400 degrees.
Mix about 4 cups bread crumbs (I either buy panko bread crumbs, or make I make my own) with spices (I use about 1/2 tsp each; more or less to taste) some ideas for spices could be: ground ginger, granulated garlic, and tarragon; curry, granulated garlic, and cardamon; Italian seasoning, ground ginger, and granulated garlic. Pretty much you can use whatever you would like. I usually just throw something together and it always turns out good.
Thinly slice 2 chicken breast halves. I usually slice them in half, but sometimes if they are thick I slice them into thirds.
Coat chicken with bread crumb mixture. Place in a single layer on the cookie sheet. Cook for about 20 minutes or until chicken is completely cooked through. If you want the breading crispy cook about 5 minutes longer. After removing from oven, use a pancake turner to remove chicken from cookie sheet.
We've eaten this kind of chicken with mashed potatoes, french fries, and fried potatoes, I have sliced it up and used it over a green salad to make chicken salad, we've eaten it with pasta and rice, and more. It is pretty versatile and super easy.
