Homemade Granola

I love granola and homemade granola is super easy to make and it is usually a lot better for you than store bought granola (and cheaper). I like that I can add whatever extras I want (coconut, nuts, etc) and it can be different each time I make it. I've made this recipe a few times and it always turns out super yummy. We usually eat it with yogurt or just pour milk on it and eat it like cereal (we very seldom eat store bought cold cereal at our house).


{Vanilla Granola}
- 5 cups regular oatmeal (not quick oats)
- 2 cups nuts (I used what I had on hand - slivered almonds, chopped almonds, chopped walnuts, and sunflower seed)
- 2 cups shredded coconut
- 3/4 cup honey
- 1 Tbsp water
- 1/2 cup coconut oil
- 2 Tbsp. vanilla extract

Mix oats, nuts, and coconut in a large mixing bowl. Heat honey and water over low heat until honey is a thin consistency. Remove from heat, add coconut oil and vanilla. Stir until coconut oil is melted. Pour over oat mixture and stir until evenly coated. Put on greased cookie sheet and spread out into a thin layer. Bake at 270 degrees for 60 minutes; stirring after every 20 minutes. Allow to cool on cookie sheet; as it cools it will get crunchier.

  3. This looks great! Just tried to make granola bars this week for the first time and they were good but could be better, I think.
